Mishandling of food can cause contamination there are procedures to be followed to prevent it. Raw shell eggs must be refrigerated on 7 degrees Celcius of 45 degrees Fahrenheit. Cooked eggs that are contained in cold holding must be at least 41 degrees F or 5 degrees Celcius. If it is under heat it should be at least 61 degrees Celsius.
